Center of the Universe Brewing Company partners with local restaurant Casa Herradura to bring elevated Mexican Cuisine to the Hanover Airpark in Ashland, VA.
Ashland, VA – Center of the Universe Brewing Company (COTU) and Casa Herradura are excited to announce a new partnership at COTU’s main taproom in the Hanover Airpark in Ashland, VA, beginning September 18th.
Casa Herradura has just completed outfitting a brand new 28’ food trailer equipped with state-of-the-art appliances including a rotisserie, fryers, and everything else you would need in a standard brick and mortar location. It is a complete mobile chef’s kitchen ready to bring the level of quality and freshness that Ashland residents and visitors have come to expect from their flourishing location on Rt. 54 in Ashland.
Casa Herradura’s original location has been operating since 2021 in Downtown Ashland. They aimed to bring a community focused restaurant that concentrated not only on the quality of the food, but also its impact on their community. Though various sponsorships concentrating on the local schools and college, Casa Herradura quickly cemented itself as a gathering place for everyone in the community. They are so grateful for the support in return and wanted to expand their presence even further to continue on that tradition of quality food, quality service, and quality community support.

Casa Herradura Mobile Kitchen will be kicking things off at the brewery with a soft opening on Thursday, September 17th from 4pm – 9pm during COTU’s weekly trivia event, offering guests a chance to try the new food option a day before their official grand opening, which is being held on Friday, September 18th. For the grand opening, the brewery will be hosting live music from Jimmy Fitch from 5:30pm – 7:30pm and offering dinner specials all evening during the 4pm – 9pm service window. Going forward, you can enjoy Casa Herradura Thursday through Sunday every week during regular taproom hours. As an added bonus, the 2 companies have already started collaborating on fun themed days and nights, creating a unique food and beverage experience each time you visit.

Thursdays: Trivia and Tacos (6pm – 8pm) – Take part or just enjoy the show as COTU hosts free trivia every Thursday where teams or solo players compete for gift cards. Casa Herradura will be running tacos specials all night.
Fridays: Fiesta Fridays (6pm – 8pm) – Free live music at the brewery every Friday while enjoying delicious and fresh Mexican cuisine.
Saturdays: Select Pairing Saturday (12pm – 8pm) – Enjoy beer specials on select styles that pair with the highlighted Casa Herradura dish of the day.
Sundays: BINGO, Brunch, and Mimosas (12pm – 7pm) – Weekly BINGO continues at COTU with hourly BINGO calls for gift cards. Free BINGO cards available to guests with any purchase. Casa Herradura will be offering exclusive Sunday traditional Mexican brunch items including Huevos Rancheros and Huevos con Chorizo. To wash it all down, COTU will be offering specials on both single serve and pitchers of Mimosas all day long!
